Chicken Broccoli Parmigiano Panini Recipe

Serves: 4
Preparation Time: 20 minutes

Ingredients:

2 tablespoons macadamia nut oil

2 tablespoons chopped garlic

2 teaspoons lemon peel (grated)

4 cups broccoli florets

1/2 cup water

1/2 cup grated parmesan cheese

8 thick slices whole wheat bread

2 cups shredded rotisserie chicken

Directions:

  1. Heat oil in large skillet over high heat. Add garlic and lemon peel and stir 30 seconds. Add broccoli and toss to coat. Add 1/2 cup water.
  2. Cover skillet and cook until broccoli is crisp-tender and water has cooked away, about 5 minutes. Add cheese and toss to coat. Season with salt and pepper
  3. Heat Panini press and layer your sauted broccoli, grilled chicken and cheese on bread. Let sandwich cook until cheese is melted and bread is golden.
