Experiment with making this as an open faced sandwich, an omelet or anything else you come up with!
Preparation Time: 30 minutes
4 (4 ounce) skinless, boneless chicken breast halves
2 tsp. olive oil
8 whole grain sandwich rounds
4 large eggs
4 slices pepperjack cheese
Approx. 2 cups of fresh spinach leaves
½ large red onion sliced thin
1. Saute spinach and onion in pan with chicken.
2. Make omelet shell in another pan.
3. Spray pan and bread for baking in oven, layer omelet shell and cheese over bread as open faced sandwich.
4. Layer spinach and chicken mixture over top, bake in oven until bread is toasted and cheese melts, about 3 minutes. Sprinkle cajun mixture on top.
