Preparation Time: 45 minutes
8 oz. smoked chicken sausage, sliced into 1/2 inch chunks (optional)
8 oz. boneless, skinless chicken breast, cut into bite sized pieces (cooked)
1 Tbsp macadamia nut oil
1 cup chopped celery
1/2 cup chopped green bell pepper
1 clove minced garlic
1 teaspoon Cajun seasoning
1 Tbsp fresh thyme
1 1/2 cups long grain brown rice
2 cups chicken broth
1 chopped tomato
1/4 tsp salt
1/4 tsp ground black pepper
1/8 tsp ground red pepper
1 cup whole grain rice, cooked
1. Cook the celery, green pepper, and garlic in macadamia nut oil for 3-5 minutes, until tender. Add the thyme and rice, and cook 3 more minutes. Stir in the chicken, tomatoes, salt, black pepper, and ground red pepper.
2. Add any remaining seasoning to taste, cover, and cook 20 minutes, until the liquid is absorbed.
3. Add cooked rice, cook another 5 minutes and serve.
