Preparation Time: 30 minutes
1 lb boneless, skinless chicken breasts
1 large yellow or white onion
1 large green pepper
1 large red pepper
1 cup fresh, sliced mushrooms
4 6" whole wheat wraps
1 lb. package shredded mozzarella cheese
Macadamia nut oil
- Dice the chicken into small cubes. Fry them in a small amount of macadamia nut oil in a large frying pan. Sprinkle a little garlic salt on chicken and brown on all sides This should take approximately 4 to 5 minutes per side. Cook until there is no pink in the chicken whatsoever.
- Heat the olive oil in a frying pan. Slice the onion and peppers, then fry them in the oil until they are golden brown. Add the vegetables to the chicken and cook them all for a few minutes over medium heat.
- Transfer 1 cup of the chicken and vegetable mixture to a small pan. Turn the stove on medium heat and sprinkle mozzarella cheese over the chicken, onion, peppers, and mushroom mixture.
- Spread mayonnaise on the wrap. Using a spatula, transfer the combined ingredients into the wrap & serve.
