Preparation Time: 30 minutes
1/2 cup olive oil mayonnaise
4 tsps sun-dried tomatoes (minced)
1 cup chopped spinach
2 tsps garlic (minced)
2 tsps prepared horseradish
2 tsps ketchup
2 pinches cayenne pepper
2/3 cup red onion (slivered)
2/3 cup sweet peppers (pickled sweet peppers i used a mixture of hot)
2 pinches red pepper flakes
8 slices whole wheat bread (1/2 inch thick)
macadamia nut oil (to spread on toasted side of bread)
1 cup cheddar cheese (white cheddar cheese shredded)
8 ozs beef (deli roast, thinly sliced)
- Mix mayonnaise, tomatoes, garlic, horseradish, ketchup, and cayenne in small bowl.
- Toss onion, peppers, pepper flakes, and some juice from the peppers in another bowl. Let it stand for at least 5 minutes for flavors to blend.
- Spread butter on one side of each slice of bread, and spread mayo mixture on the other side. Sprinkle cheese on two slices, top with roast beef, then some of the salad mixture and spinach, then the other slice of bread, grill paninis and serve.
