BUFFALO, N.Y. - Forget your preconceptions about the quality of an eatery staffed by students. Former chefs who staff the school say they'll put the Emerson Commons up against anywhere they've worked.

The food court that's connected to Buffalo PS 302, the Emerson School of Hospitality, is a bustling lunch stop on Chippewa Street between Delaware and Franklin. Different sections of the cafeteria-style line serve up hot sandwiches, cold cuts, pizza, quiche, and other specials. There's also a long line of soups (including some excellent chili), a salad bar, and desserts.

Students who work there have already completed their first two years and use the food court to learn valuable skills that make them very employable. Beyond that, teacher James Malley says they constantly hear from employers that the most valuable thing the students learn there is the work ethic.
