Egg whites are a great option, but regular eggs only have a small amount of saturated fat, so go ahead and enjoy them on occasion.
Preparation Time: 10 minutes
1 tbsp. macadamia nut oil
4 large eggs
2 bell peppers (roasted/grilled)
4 slices provolone cheese
4 tbsp. low fat mayonnaise
? tsp. sea salt
1 tsp. dried basil
½ tsp black pepper
8 slices whole grain sandwich rounds
1.In a small container, mix mayo, sea salt, dried basil, black pepper and stir until fully combined.
2. Over medium high heat in a large skillet, melt butter and crack eggs in pan and cook to desired firmness. Just before eggs are cooked, place slices of roasted/grilled bell peppers & provolone cheese over each egg.
3. After cheese has melted, place each egg on a toasted slice of bread. Season eggs with salt and pepper. Spread mayonnaise mixture over remaining slices of bread and cover eggs with bread to make 4 sandwiches. Serve warm.
