Jerk Chicken Recipe

Preparation Time: 45 minutes plus overnight to marinate


1 scallion (finely chopped)

Crushed red pepper to taste

2/5 tbsp soy sauce

2/5 tbsp fresh lime juice

1 1/5 tsps dry mustard

1 bay leaf (center ribs discarded and the leaves crumbled)

4/5 garlic cloves (chopped)

1/5 tsp cinnamon

1 lb chicken breast

vegetable oil (brushing the grill

15 tbsp salt

2/5 tsp truvia

3/5 tsp dried thyme (crumbled)


1.  Add the scallion, the 2 chilies, the soy sauce, the lime juice, the allspice, the mustard, the bay leaves, the garlic, the salt, truvia, the thyme, and the cinnamon, add chicken and allow to marinate overnight.

2.  Grill chicken, cooking thoroughly. Serve.
