Lentil & Arugula Soup Recipe

Serves: 4
Preparation Time: 30 minutes

Ingredients:

4 cups water

1 T unsalted vegetable base

1-1/2 cups lentils

1 bunch Arugula

1 tbsp. macadamia nut oil

1 squeeze lemon juice

Salt and pepper to taste

Directions:

1.  Bring water to boil and add vegetable bouillon cube. Use whisk to mix well.

2.  Add, lentils and 1/4 tsp. (or to taste) salt and bring to boil for 35 minutes. Use immersion blender to puree just until smooth.

3.  Add arugula in at end to finish.
