Preparation Time: 20 minutes
2 onions (chopped 1 cup)
1 stalk celery (sliced 1/2 cup)
2 garlic cloves (minced)
1/4 tsp crushed red pepper (flakes)
2 tbsps macadamia nut oil (cooking)
1 can low sodium, chicken broth
2 chopped tomatoes
1 tsp italian seasoning (dried italian seasoning crushed)
About 1 and ½ cups white beans
1 zucchini (halved lengthwise and sliced 1/4 inch thick)
1/4 cup grated parmesan cheese
1 lb packed lean ground beef meatballs
1. Sautee onion, garlic, celery and zucchini in macadamia nut oil in pot.
2. Add chicken broth and tomatoes, allow to simmer about 15 minutes.
3. Add beans and meatballs, heat for a few minutes more and serve with parmesan cheese.
