Greek Pasta Salad with Chicken Recipe

Serves: 4
Preparation Time: 15 minutes, 1hour refrigeration time

Ingredients:

7 ozs pasta (uncooked whole grain rotini)

½ cup chopped radishes

1 teaspoon oregano

¼ cup olive oil

Teaspoon lemon juice

1/4 finely chopped onion

1 cup chopped sun dried tomatoes

½ cup radicchio

1/2 cup feta cheese

1 shredded rotisserie chicken

Salt and pepper to taste

Directions:
1. 
Cook rotini uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain and cool by running cold water over the pasta in a colander set in the sink.

2.  Mix olive oil with seasonings, add chicken to coat in dressing. Add feta and sundried tomatoes, let sit for about an hour in the fridge.

3.  Add remaining ingredients to pasta, mix well. Serve.
