Preparation Time: 20 minutes
1 lb ground turkey, divided into patties
8 whole grain bread rounds
4 slices swiss cheese
4 large leaves escarole
½ cup sundried tomatoes
½ onion, sliced
1. Brown patties in nonstick pan, cooking thoroughly, 165 degrees. After about 5 minutes, add onions and escarole with sundried tomatoes and sauté in pan.
2. Layer remainder of ingredients on bread with burger, toast in panini press until golden brown. (you can also cook this in a pan or leave as is).
