Breakfast Burrito Recipe

Serves: 4
Preparation Time: 20 minutes

Ingredients:

4 whole wheat tortillas (6 inch)

2 eggs (scrambled)

2/3 tsp almond milk

1 skinned, boiled cubed sweet potato

1 lb turkey sausage

½ green pepper chopped

1 cup chopped spinach

? onion chopped

½ jalapeno chopped to taste

1/2 cup cheddar cheese (grated to taste)

salt & pepper

4 tablspoons low fat sour cream

hot sauce to taste

black bean salsa to taste

Directions:

1.  Scramble the eggs in macadamia nut oil, add diced sweet potatoes and spinach.

2.  Together, saute the bell pepper, spinach, the onion and the jalapeno until the onions are transparent. Add turkey sausage.

3.  To each tortilla, add small amounts of egg, potato, sausage and cheese. Fold like an envelope.

4.  Serve with sour cream, hot sauce and salsa.
