We're all searching for leaner cuts of protein to satisfy us, and keep us on track with our healthy goals. Here's a way to get that heartening roasted, rotisserie chicken flavor!
Preparation Time: 30 minutes, plus overnight marinating
1/4 cup tarragon (chopped)
3 garlic cloves (peeled and halved)
1 tsp Italian seasoning (dried)
1 tbsp fresh rosemary
3 tbsps Dijon mustard
2-3 tbsp lemon juice
6 tbsps macadamia nut oil
4 boneless skinless chicken breasts
1. Place chicken, tarragon, rosemary, Italian seasoning, garlic, lemon juice, Dijon mustard and macadamia nut oil in a plastic bag. Marinade it overnight.
2. When chicken is done marinating, place them on the grill.
3. Grill for 7 minutes per side until juices are clear and internal temperature is 170 degrees.
