Spinach and Leek Galettes Recipe

Serves: 4
Preparation Time: 45 minutes

Ingredients:

Sliced leek

Sliced mushroom

Sliced white onion

4 whole grain wraps

¼ cup frozen leaf spinach

8 eggs

I T macadamia nut oil

Directions:

  1. Preheat oven to 350 degrees
  2. Sauté mushrooms onion and leek with macadamia oil.
  3. Forum ½ whole grain wrap into non stick muffin tin
  4. Put spinach and mushroom and onion in whole grain cups
  5. Add 1 whole egg on top
  6. Bake for 15 minutes (or until egg is firm) in a 350 degree oven.
  7. Freeze when cool or serve 2 per person right away!
