Preparation Time: 40 minutes
1 tbsp macadamia nut oil
1/2 onion (chopped)
1 clove minced garlic
1 cup chicken broth
8 1/3 ozs tomatillos (drained and chopped)
7 ozs diced tomatoes
3 ozs green chile (diced)
1/4 tsp dried oregano
1/4 tsp coriander seed (ground)
tsp ground cumin
1 corn (ears fresh)
1/2 lb cooked chicken (diced, meat)
1 cup white beans
pinch black pepper
- Heat oil, and cook onion and garlic until soft.
- Stir in broth, tomatillos, tomatoes, chilies, and spices. Bring to a boil, then simmer for 10 minutes.
- Add corn, chicken, and beans; simmer 5 minutes. Season with salt and pepper to taste.
