White Bean Soup Recipe

Preparation Time: 1 hour


1 1/5 quarts vegetable broth

1 cup water

1 cup green beans (fresh, rinsed trimmed and snapped into bite size pieces)

1 3/5 zucchini (cut into small cubes)

1 1/5 carrots (cut into bite size pieces)

2/5 cup basil leaves (picked from stems)

4 cloves minced garlic

1/5 cup macadamia nut oil

2/5 tsp salt

1 cup white beans (drained and rinsed)

1/5 cup grated parmesan cheese


  1. Bring the vegetable broth and water to a boil in a large pot. Stir in the green beans, zucchini, carrots. Return to a boil, reduce heat to medium-low, and simmer 45 minutes.
  2. Stir the white beans and return to a simmer.
  3. Sprinkle with Gruyere cheese and Parmesan cheese to serve.
