Gazpacho Soup Recipe

Serves: 4
Preparation Time: 30 minutes

Ingredients:

1 3/5 cups tomato juice

1/2 minced onion

1/2green bell pepper (minced)

1/2 cucumber (chopped)

1 cup tomatoes (chopped)

1 green onion (chopped)

1/2 clove minced garlic

11/5 tbsps fresh lemon juice

1 tbsp red wine vinegar

1/2 tsp tarragon (dried)

½ tsp dried basil

1 cup fresh parsley (chopped)

1/2 tsp truvia

Salt & Pepper

Directions:

  1. In a blender or food processor, combine all ingredients.
  2. Blend until well-combined but still slightly chunky.
  3. Chill at least 2 hours before serving.
