Turkey Walnut Salad Recipe

Be careful when adding fresh fruits to salads as they will raise your blood sugar. Use dried fruits instead.

Serves: 4
Preparation Time: 15 minutes

Ingredients:

2 cups bite-size chunks skinless turkey breast

2 tbsps shallots (minced)

1 1/3 tbsps balsamic vinegar

2/3 tbsp red wine vinegar

1 tsp extra virgin olive oil

Salt & Pepper to taste

8 cups escarole or spinach (torn)

½ cup sliced belgian endive

1 1/3 cups radicchio torn

1 or two dried apricots, chopped

2 tablespoons crushed walnuts or pecans

Directions:

1. Combine shallots, red wine vinegar, balsamic vinegar extra virgin olive oil, salt and pepper in a large bowl, stirring with a whisk.

2. Add greens, tossing enough to get a full coating. Add remaining ingredients. .

3. Serve with about one teaspoon crushed walnuts on top.
